The Alliance Française de Dallas has the pleasure to host a Chocolate Sensory Workshop conducted by France’s reknowned Gourmet Chocolate Expert, Benjamin Desmartins on March 19th, 2009.

 

Benjamin Desmartins (Maison Comptoir du Cacao) has been honored several times and invited to participate since 2002 at the Salon du Chocolat in Paris, Beijing and Moscow and to a hundred culinary salons in France each year.

 

Benjamin Desmartins will speak on the making of chocolate, soils, grape varieties (harvest sites) and uncooked, on the transformation of products, flavors, on the changing tastes, the association of chocolate with some alcohols. Upon request, the more economic aspects can be addressed: Cocoa Exchange, Economic Issues for the producing countries, emerging markets in Asia, India and Russia.

 

The conference, will last approximatly 45 minutes, and will be followed by an exchange with the public and a tasting to raise awareness of the sensory analysis of chocolate (descriptive vocabulary of chocolate sensations, tastes analysis).

 

A glass of wine will be offered at the end of the conference.
